Toast is a pretty good breakfast, especially if the bread is wholemeal. It is fast, easy and provides lots of slow release carbohydrates that should help keep energy levels up all morning. If you are getting a bit bored of having plain toast with jam (jelly) or marmite every single day then liven it up a little. This is a healthy and tasty way to start the day. Put as many slices of bread as you plan to eat under the grill and toast one side. Baguettes work best but any will do. Then spread the other with a mixture of tomato puree, garlic, oregano, and olive oil. Add some sliced peppers and/or onions with a little grated cheese and grill until the cheese has melted.
Pizza for breakfast can be far better for you than it sounds. You might want to brush your teeth afterwards rather than before though, especially if you used lots of garlic and onions (these are of course optional). If you are worried about calories then simply go easy on the oil and cheese.
Cream cheese toasties
If you have a toastie maker then make the most of it. The kind that create sealed pockets are by far the best and work well with all kinds of sweet and savoury mixtures. One of the best fillings consists of soft cheese, finely chopped bell peppers or other vegetables and seasoning to taste. If you have a sweet tooth then you can try the same but with diced fruit instead of vegetables and a little sugar.
Bananas, nuts and chocolate
It might sound indulgent but both fruit and nuts are packed with nutrients that complement perfectly those you get from your bread. Simply toast your bread, skip the butter and use a thin layer of chocolate spread instead. Then top with sliced or mashed banana and flaked or diced almonds, brazil nuts or walnuts. This tastes like a treat but is in fact a nutritious breakfast.
Interesting, tasty breakfasts are an excellent way to start your day. Toast can easily be the basis for such meals. Try different breads and different topping combinations and don’t assume that only ‘breakfast’ foods can be eaten at breakfast time. If you like something then why not enjoy it first thing in the morning?
