Focaccia Sandwiches

Ingredients:-

4 pounds fresh fava beans
1/4 cup extra-virgin olive oil
Tabasco sauce
juice of 1/2 lemon
salt and freshly ground pepper
2 pounds fresh focaccia
8 leaves of lettuce
1/2 pound salami, sliced
4 hard-boiled eggs


How To:-

Shell the fava beans: Split open the bean pods and remove the individual kernels. Drop the kernels into boiling, salted water. When water returns to a boil, cook for 1 minute, until skin turns a brighter green. Drain and cool by rinsing under cold running water or dunking beans in a bowl of ice water. Peel thick outer skin off each bean: Cut into the skin with your fingernail or a sharp knife, then squeeze out the tender core.

Make the fava purée: Put the cooked fava bean cores in a blender and purée. When the mixture starts to get smooth, add the extra-virgin olive oil, a few drops of Tabasco sauce, freshly squeezed lemon juice, and salt and pepper to taste; blend until fully combined.

Make the sandwiches: Cut the focaccia into 8 equal rectangles, then slice each one horizontally through the center so you get 2 slices of even thickness. Spread the bottom half with a thin layer of the fava purée, then build sandwiches with lettuce leaves, thinly sliced salami and hard-boiled eggs cut into rounds (use an egg slicer to get firm, even slices). Complete sandwiches by covering each half with another slice of focaccia. Wrap sandwiches in waxed paper to keep them fresh. Serves 8
