How to Make Cauliflower Soup

Soups are popular among people irrespective of the month or season of the year. There are people making soups to enjoy the chilly winter months, while others love to eat it as an appetizer before staring the full course meal. Generally, many delicious vegetarian dishes are made using cauliflower as a prime ingredient. But the vegetable can also be used to make a delicious soup along with a set of simple and easily available ingredients.

How to Make Cauliflower SoupRecipe I

Ingredients

½ stick of butter
1 to 1 ½ pounds of cheese
1 can cream of mushroom soup
1 can cream of celery soup
1 can evaporated milk
1 teaspoon of Worcestershire sauce
1 head cauliflower
1 bunch broccoli
Instructions

Melt the butter by adding to a large saucepan. Add the cheese gradually. Keep stirring the cheese till the same is completely melted and becomes creamy.
Now add the cream of mushroom soup, cream of celery soup, evaporated milk, and Worcestershire sauce to the melted cheese. Mix all the ingredients well and bring the mixture to a boil.
Put the head cauliflower and bunch broccoli to the ingredients and cook for about one hour. During the cooking keep checking the soup after 15 or 20 minutes. Remove the saucepan from heat when the vegetables are still firm but no longer crunchy.
The soup is ready, transfer it to bowls and serve the same hot.

Recipe II

Ingredients

1 head cauliflower, broken into florets
2 cups of milk
1 can of vegetable stock
1 onion, diced
½ cup of celery, sliced fine
1 large potato, diced
Instructions

Add the cauliflower to a shallow pan and keep it popping till it started to toast on the edges or about two to three minutes. Remove the cauliflower from heat and transfer it to a kettle along with the milk and vegetable stock. Use a separate saucepan and cook the onion and celery with water till the vegetables turn almost tender. Now add the diced potato to the boiled vegetables and cook till it becomes soft.
Now pour the vegetables and cauliflower along with the remaining water. Cook the dish till the cauliflower turns tender. Keep stirring the dish regularly during the cooking process.

Transfer the dish to soup bowls and serve the same hot. If you want you can also make a puree out if the soup. Keep cooking the dish till all vegetables are fully cooked and soft. Transfer the dish to s food processor and run it to make the puree. The puree can be served after adding a slice of cheese, bits of bacon, or seasoned croutons. There is also option to make a thicker soup by adding a flour thickener, or a can of cream of mushroom soup or cream of celery soup. Mix these additional ingredients well with the cauliflower during cooking to avoid forming of lumps.
